3 part recipe (quadrupled!!)
Cookie Base

2 C butter or margarine
2 C confectioner's sugar
1 tsp salt
4 tsp vanilla
4-5 C flour (cake flour)
(if using food processor, halve ingredients and mix in two batches)
Cream butter, sugar, salt and vanilla then gradually incorporate flour until no longer sticky (may not use all flour)
Chill dough and form into balls (whatever size the base cookie should be). Make indentation with thumb or whatever implement works best for you.
Bake @ 350F for 12-15 minutes (light golden brown - don't overcook!)
Filling

12 oz cream cheese
4 C confectioner's sugar
8 Tbsp flour
4 tsp vanilla
2 C chopped walnuts
2 C flaked coconut
Soften cream cheese and mix all ingredients in a bowl. Place by spoonfuls onto cooled cookie bases.
Frosting
=========================
1 C chocolate chips
4 Tbsp hot water
4 Tbsp butter
1 C confectioner's sugar
Microwave
In a large Pyrex mixing cup heat everything but confectioner's sugar until all ingredients are melted. Mix in sugar gradually until smooth.
Stove Top
Heat all ingredients on low heat with constant stirring until fully incorporated
Allow hot frosting to cool slightly to develop some viscosity, then drizzle on top of filled cookies.
NOTE: If frosting is too thick, thin with small amounts of water.
Yield: 6-7 dozen cookies.
