Ingredients
2 long, thin zucchini (courgettes)
3 or 4 eggs, beaten
sticky rice "flour" / powder
vegetable or sunflower oil for frying
freshly ground salt and pepper to taste
Procedure
Place a quantity of flour and beaten eggs in separate bowls.
Slice zucchini in approximately 1/4in slices.
Heat 2Tbs oil in a pan until very hot but not smoking.
Dust each zucchini slice in rice powder, then dip in egg.
Place coated zucchini slices in a hot pan and cook until golden brown on both sides (2-3 minutes per side)
NOTE: A dipping sauce can be made with soy sauce, sugar and sesame oil if desired.
